A 19th-century palace in the old medina, reworked by an owner whose loyalties are split between Morocco and Mayfair, which explains the Arabic-Moorish archways coexisting peacefully with Art Deco flourishes. A black marble pool anchors the courtyard, and the spa goes deep: hammam, Jacuzzi, facials, massages. There's also a library, a kids' room, cooking classes, and a team happy to arrange tours of Fez when the riad's pull eventually loosens.
