A few steps from the bullring in old Pamplona, this family-run fine dining room holds a Michelin star and revolves around a simple conviction: that flavour should do all the talking. The chef grew up in the kitchen and it shows, his take on Navarran cuisine is technically sharp but rooted in the region's produce rather than in showing off. His sisters run the floor with the same ease, and the whole place feels like it has nothing to prove.
