The name comes from the Basque word for a log, which tells you something about how seriously this creative tasting-menu restaurant takes its place in the Urdaibai Biosphere Reserve. Set inside a farmhouse hotel a few kilometers outside Bermeo, with valley and sea views through the windows, the chef builds each seasonal menu from the surrounding ecosystem, much of it grown on-site. Over thirty txakolis from Bizkaia make the drink list worth your full attention.
