A one-Michelin-star restaurant inside Hotel Stein where a plant-forward surprise menu, ordered 24 hours ahead, sits alongside French classics like a lobster cassoulet and pheasant suprême. The chef runs both sides of the menu with the same seriousness, which is a harder trick than it sounds. A bright conservatory and garden terrace handle the setting. On the way out, there's a small shop stocked with house-made things worth carrying home.
