A ramen shop in Ota-ku where the blackboard lists the names of the fishermen who caught the day's clams, which tells you something about how seriously the kitchen takes its soup. That soup is built around shijimi clams hauled from Lake Shinji in Shimane, and the salt-flavoured bowl is the move if you want the broth to do its full argument. The Michelin Guide awarded it a Bib Gourmand.
