A ball of cedar sprigs hangs from the eaves, the traditional calling card of a sake house. Inside a converted detached house in Higashinari, old tansu chests and carved transoms set a quietly nostalgic mood. The chef traded a career in Chinese cuisine for Japanese sake, and the omakase here is built around that pivot: a long procession of small dishes designed to pace a serious pour. The Michelin Guide has given it a Bib Gourmand.
