Shushabandi is a fine dining room in central Tbilisi doing modern Georgian cooking, which means the khachapuri has been to finishing school. It holds two Gault&Millau toques, and the staff manage to keep the place feeling cozy rather than stiff. Call ahead for a table, since plenty of other people have the same idea, and bring some patience, because the kitchen takes its time. Dress like you mean it.
