Ten seats, candlelight, and a tasting menu built around what the forest outside is doing right now. Silva is a fine dining room inside a nature hotel, small enough that the chef can pace each course to the table rather than the kitchen. The cooking leans modern French with a forager's sensibility, fermentation and smoke doing quiet work throughout. Two set menus, forest and meadow, though every course is also available à la carte if commitment feels like a lot.
