A monthly-changing menu is the organizing principle at So'Mets, a bright, modern gastropub with a terrace in Beaulieu-sur-Mer. The chef came up through serious kitchens, La Vague d'Or among them, before opening this considerably more relaxed room. The cooking lands somewhere between French bistro comfort and something more precise, seasonal, and quietly confident. Service is warm without being fussy, which fits the neighborhood.
