A Michelin-starred dining room inside a country house hotel a short drive from Windermere, SOURCE opens with aperitifs in one of the hotel's sitting rooms before moving into a menu that borrows freely from Cumbria and Japan in the same breath. Lamb might appear as loin, belly, and shoulder together, while a beurre blanc gets deepened with koji. The Lake District setting does a lot of the heavy lifting before a fork is lifted.
