Sublime is a fine-dining restaurant set inside a handsome house in a well-heeled Guatemala City neighborhood, with contemporary Guatemalan art on the walls and a semi-open kitchen guests can watch. It holds a spot on Latin America's 50 Best Restaurants list, and earns it by treating the country's history as a menu.
