  1. Floor-to-ceiling windows on the 11th floor of a harbor-side warehouse building frame the whole port, which means the open kitchen across the room has to work to hold your attention. This is a Michelin-starred tasting menu restaurant, Danish through and through, where the chef builds courses from familiar northern ingredients, brown shrimp, red deer, Jerusalem artichoke, into something that feels less like a recitation of the larder and more like an argument for it.
