A family taqueria across from a cemetery, which locals have long called "tacos del muerto" with the cheerful fatalism only a third-generation operation earns. The tortillas, flour or corn, hit the plancha with oil until they blister and crisp at the edges. The fillings run from picadillo with potato and ground beef to pork shank stewed in red chile, with the taco de cabeza, chopped beef head meat, as the signature order for anyone paying attention.
