  1. A fine dining chef trading white tablecloths for a burger shop is either a crisis or a revelation, and here it reads as the latter. Single-source USDA prime beef is the whole point, dressed simply in brioche with the usual suspects done well. The fries are double-cooked in beef tallow, which is either old-school or very on-trend depending on your crowd. The Michelin Guide has taken notice.
