TAQUERíA Elemi
Mexican
The al pastor here is sliced while partially frozen so every cut hits the trompo at the same thickness, the tips charring and crisping while the center stays fat-slicked and juicy. It's a strip-mall taquería from the team behind Elemi, and the tortillas never sit more than a few hours off the comal. The New York Times put it on their 2026 Restaurant List, which is a lot of attention for a place that opened quietly and just makes very good tacos.

Al pastor
“The standout is the al pastor, the pork for which is sliced while partially frozen to give it an even thickness, then arranged on the trompo so the tips get crunchy and caramelized, but the meat stays juicy and slicked with fat.”
