A two-Michelin-star tempura counter in Shibuya where the chef mixes batter with two types of water and liquid nitrogen, which tells you right away that convention is not the priority here. The omakase moves at its own tempo, with inventive interludes breaking up the procession of fried things. Cold sea urchin on a hot perilla leaf is the kind of detail that sounds gimmicky until you try it.
