The dining room is kept dark, like something submerged, and the menu follows the same logic: a Michelin-starred French contemporary restaurant built around the idea that mountain streams become rivers that feed the sea. The chef's obsession with seafood started in Marseilles and landed here, in Ebisu, as a kind of philosophical project, Japanese ingredients folded into French technique with the seasons doing most of the arguing.
