A former fishmonger's shop in a Basque village that has been turned into a tiny, carefully considered restaurant, with terracotta walls, linen banquettes, handcrafted local ceramics, and a menu that follows the market and the chef's imagination rather than any fixed formula. It seats very few people, and the cooking swings between rustic and delicate without warning, which is rather the point.
