Seven hundred and fifty scarlet glass spikes cover the back wall of this hotel cocktail bar, which is not what anyone walking through the Dorchester's stately lobby expects. The room went full nightclub somewhere along the way, all high-backed booths and bronzed glass, with a DJ where a pianist used to sit. The drinks, to their credit, stayed classical, which is probably what the older regulars are quietly clinging to.
