A French auberge in Hakone is an odd choice until you're soaking in the private onsen that comes with every room. This small resort takes twenty Western-style rooms and pairs them with European cooking built from local ingredients, some looking out over the caldera, others into dense cedar green. It holds a Michelin Key, and the whole thing feels like someone genuinely couldn't choose between Burgundy and the hot springs, then refused to.
