    A collaboration between the Imperial Hotel and the Ishikawa Group, Torakuro sits in the basement of one of Tokyo's grand old institutions and earns a Michelin star for cooking that crosses French and Japanese technique without making a fuss about it. Consommé shares the menu with dashi; confit meets char-grilling. The room carries the kind of quiet formality that reminds you service is a deliberate art, not a personality quiz.
