    Ski boots optional, but the name at least sets expectations: Vidocq is a contemporary restaurant in the Pyrenean resort town of Sallent de Gállego, named after France's legendary rogue-turned-detective. A single seasonal tasting menu threads Thai-inflected technique through Aragonese mountain cooking, with most ingredients pulled from small local producers. It's a stranger pairing than it sounds, and somehow the mountains make it make sense.
