This is a bistro in a Belle Époque villa, earning a Michelin Bib Gourmand with market-driven cooking that nods to the Landes landscape without becoming a museum piece. The île flottante has developed something of a local legend status. The chef trained with Troisgros and Bras, and it shows in the plating without making the room feel stiff.
