A one-star Michelin kaiseki counter in Shimogyo where the name, "Wagokoro," roughly translates to a spirit that soothes. The chef trained deep in the Kyoto tradition and it shows: handmade thick-fried tofu and fish cake arrive in broths that taste like someone spent years learning restraint. Presentation is natural rather than architectural, the food landing the way a well-cooked meal at a serious household might, if that household had a Michelin star.
