Hand-pulled biang biang noodles are the point at this counter-service Xi'an noodle shop in Midtown, an offshoot of the original out in Duluth. You order, you grab a paper plate, you find a seat. The cooking leans on cumin and chili in a way that feels more like a region asserting itself than a kitchen showing off. The boiled dumplings, pork or lamb, come by the baker's dozen with a house dipping sauce that does most of the talking.
