The chef grew up in this kitchen, which you can feel in how the room runs. Solla is a Michelin-starred tasting menu restaurant outside Pontevedra where the Galician coastline does most of the talking. The menus take their names from old fishing techniques, and the cooking follows that logic, pulling shellfish and sea vegetables through a creative lens that never loses sight of where it is. Meat exists but has to be requested, which tells you something about priorities.

The live tank near the entrance says everything about this glass-walled seafood restaurant on the Verdugo estuary: the langoustines are very much alive when you arrive. The kitchen keeps things simple, letting the fish in the display case carry the argument. A few well-chosen meat and rice dishes round out the menu for anyone who wandered in from the wrong region. The river views from every table are a reasonable consolation for being this far from the coast.

The open grill does most of the talking at this Vigo restaurant, where the chef sources fish and seafood almost entirely from the auction in A Guarda, so the menu shifts with whatever the Rías Baixas offered up that morning. Spider crab, lobster, prawns from local estuaries, wild bream, and whatever else arrived at dawn share the card with seasonal Galician meat and vegetables, no flourishes required.
