The menu wanders past its brief with soft-shell crab in vanilla tempura alongside the expected shrimp cocktail.

Western Steakhouse
The 1889 Saloon inside is supposedly designed by the cattle baron's wife, which is exactly the kind of detail that makes this old-school Phoenix steakhouse feel like it earned its spurs. Corn-fed aged beef and prime rib anchor the menu, alongside bison meatloaf and baking soda biscuits that haven't changed much since the place opened. The Western décor leans hard into its ranching roots, and nobody seems to mind.

The move at this old-school Phoenix chophouse is to come in through the kitchen, which is less a quirk than a statement of intent. Red leather banquettes, scarlet wallpaper, dim lighting, and the kind of martinis that explain why the power brokers still fill the room. The relish tray arrives gratis over ice, which somehow feels exactly right. They've been doing the 48-ounce porterhouse and prime rib forever, and they're not taking notes from anyone.
