The chef runs the progression with quiet precision, moving from composed kitchen courses into nigiri that leans traditional without a lot of ceremony. The sushi speaks for itself, which in a genre that can tip into theater is its own kind of statement.


  2. The à la carte menu is the point here, not the omakase counter tucked off to the side. This sushi spot in the Channelside dining cluster runs livelier than the usual minimalist Japanese room, mixing nigiri and creative maki with izakaya small plates and ramen for the table. The fish skews seasonal and sourced with care. It's a sister to Koya, and carries the same conviction that a fun room and serious sushi aren't mutually exclusive.


  3. A block from St. Pete's bar strip, this omakase counter keeps things focused: two menus, both built around nigiri, with the chef making confident calls on what goes with what. Koji-fermented ora king salmon brushed with whiskey barrel-aged soy is the kind of detail that tells you plenty about the ambition here. The room is small and the format is fixed, so you give up control at the door and mostly stop minding.
