A sliding door off Sushi Azabu's dining room inside the Stanton Hotel opens onto a pale Hinoki cypress counter where an omakase menu moves between hot and cold courses with a few quiet surprises along the way. Most of the fish is handpicked at Japanese markets and flown in weekly, and the itamae are the kind who actually enjoy questions. For Ocean Drive, the whole setup is notably low on attitude.
