The chef brings a Buenos Aires upbringing through stints in London, Paris, and Moscow, and the Modern Mediterranean tasting menus carry all that mileage without feeling like a geography lesson. Two menus, three or five courses, dishes meant for sharing, and a room packed with people who booked ahead because they knew to.
