Clay pots of Nara's Hinohikari rice, seasoned with tiny fish cooked down with pepper, set the tone at this Japanese kaiseki restaurant tucked into the Sakurai countryside. The cooking is quietly sincere, local ingredients and local crockery doing most of the talking. The meal ends with handmade sweets and matcha, which is a gentler send-off than most places manage. A Michelin star.
