A massive coach gateway off rue Tronchet hides this Michelin-starred creative restaurant almost entirely from the street, which feels deliberate. Inside, it's all black, inspired by the painter Pierre Soulages, with a few sculptures keeping it from tipping into void. The chef runs carte blanche menus built around high-end ingredients and combinations that don't announce themselves in advance, so you're eating on faith.
