Contemporary Basque
The charcoal grill and a rolling cheese cart set the tone at this Michelin-starred restaurant in the old border town of Hondarribia. The brothers running the kitchen call their cooking "Bidasoa cuisine," rooted in Basque tradition and pulled toward the contemporary, with aged fish and wood-fired heat doing a lot of the work. There's a casual taberna side and a more formal dining room, which means the same address can cover two different evenings.
