    A medieval castle that once belonged to one of Italy's great statesmen is an excellent place to eat anchovy and peppers, and the kitchen here leans into that energy. This is a sit-down restaurant with a modern Piedmontese menu, where classic regional ingredients get a contemporary reworking and the chef makes a point of using every scrap of what comes through the door. Fish dishes from beyond the region round things out.
