  1. Curtains woven from sailing rope and walls traced with fish silhouettes set the mood at this two-Michelin-star seafood tasting menu restaurant inside the Gran Meliá Sancti Petri. It's an outpost of Ángel León's Aponiente, and the kitchen leans hard into his reputation as the chef of the sea, sending out dishes like shrimp cured in Manzanilla alongside wines from Cádiz. Guests even receive a crew logbook, because a nautical metaphor, carried this far, becomes its own kind of charm.
