  1. Two chefs who met in someone else's kitchen finally opened their own, and the menu reads like they've been planning it ever since. Allium is a small, modern restaurant in Haarlem where classical technique quietly absorbs a wider set of flavors, a vadouvan-laced bisque here, a jalapeño and fermented tomato pairing there. The room is intimate enough that you notice the cooking is having fun without announcing it.
