    Rosemary and nori focaccia is as good an opening argument as any for the Italian-Japanese tasting menu at this Dalston neighbourhood spot. It's a kondate-style parade of courses that shouldn't cohere but keeps doing so, plate after plate. Sit at the marble counter if you can, where the open kitchen makes the whole thing feel like watching a friendly wager play out in real time.
