A Michelin-starred fine dining room perched above the Saint-Pierre Market in central Clermont-Ferrand, with contemporary interiors and tableware that take themselves seriously, in a good way. The chef came from Poland with a deep feeling for Auvergne, finding something familiar in its landscape, and channels that into precise, visually deliberate plates built around noble ingredients treated simply rather than fussed to death.
