    Philippe Mille cooks over vine branches here, a detail that tells you everything about how seriously this two-Michelin-star restaurant takes the Champagne terroir. Named for one of the region's rarest grape varieties, it's a fine dining room done in muted naturals, with a champagne list that would make a sommelier emotional. The chef brings seafood into conversation with the landscape, and his touch with pepper and citrus is the kind of thing people drive to Reims for.
