  1. A converted textile factory on what used to be industrial wasteland sets the scene for this Michelin-starred creative restaurant, where the cooking runs between Normandy and Southeast Asia without feeling like it's trying too hard. The chef trained at Troisgros and La Grenouillère, and the menus show it: seafood and vegetables, ponzu and shiso, green curry alongside French technique. Set menus only, and the room is spare, cool, and quietly serious.
