The iron-and-glass dining room is built to frame the Tuscan hills from every seat, and the open kitchen behind a yellow Siena marble wall gives the chef somewhere worthy to work. This is a two-Michelin-star fine dining restaurant in Colle di Val d'Elsa, where Gaetano Trovato runs tasting menus alongside à la carte. The bread alone has been a talking point for years, and the wine list runs to 7,000 labels.
