This Gramercy fine dining spot runs a prix-fixe-style menu where the combinations are adventurous but never alienating, the sort of place where kimchi beurre blanc makes complete sense by the second bite. Regulars book well ahead, and the team's warmth closes the gap between the spare room and a very full table.
