The trout comes from a stream up the road, the lamb from the valley just past that, and the coffee is roasted in a village you probably drove through on the way. This small modern restaurant in the Pyrenean town of Argelès-Gazost runs on an almost aggressively local pantry, with the chef turning those hyper-regional ingredients into polished, inventive plates. A Michelin Bib Gourmand, and the kind of place that makes a detour feel obvious in hindsight.
