Bare stone walls from a building that's been around since the 1600s share space with modern furniture on a quiet historic lane in Liège. The chef pulls produce from the garden out back, folds in Asian technique alongside French tradition, and updates the set menu often enough that regulars come back without looking at the calendar. It's a fine dining restaurant where the cooking has range without making a show of it.
