  1. Sourdough pizza with a Nordic edge in Nørrebro, where the mozzarella and charcuterie are made in-house and the toppings lean on Danish organic producers. The crust comes out dark and aromatic, the wine list runs to orange bottles and serious labels, and the whole setup has the relaxed confidence of a place that's been setting the tone in Copenhagen for a long time. Informal service, strong bread, and a room full of people who know exactly where they are.
