The menu here was adapted from a 19th-century cookbook by Georgian writer Barbare Jorjadze, which is either a charming origin story or the most elaborate way to do recipe research. Either way, this family-run restaurant in Tbilisi revives dishes that had largely disappeared, cooked from fresh local ingredients in a room full of lace tablecloths, vintage crockery, and soft lamplight.
