Bare Bones is a neighborhood butcher shop in the Nashville neighborhood of The Nations, where you go for good cuts of meat and leave with a tub of pimento cheese you didn't plan on. They pickle the pimentos themselves, which is why the spread runs sharp and zippy, and it won Nashville Scene's Best Pimento Cheese in 2023. Grating cheese by hand is a good way to lose a knuckle, so buying theirs is just self-preservation.
