The chef spent years at Noma before bringing fermentation and quiet boundary-pushing back to Beirut, and the menu lands somewhere between Levantine tradition and places tradition has never been. Ranked fifth on MENA's 50 Best Restaurants, it carries that weight without seeming to try.
