    A 16th-century convent given a full modernist overhaul, this boutique hotel in Santo Domingo's Zona Colonial pairs original stone columns and centuries-old brick with Bang & Olufsen speakers and rain showers stocked with L'Occitane. The suites lean into mid-century furniture and fashion photography rather than preservation. Castil serves Dominican food downstairs, and the rooftop Moon bar looks out over one of the oldest neighborhoods in the Americas.
