Chef Christopher Bleidorn holds a two-star Michelin rating and earns it by pairing live-fire cooking with a real sense of play, lacquered quail assembled tableside like Peking duck, creek trout arriving as roe, dessert hidden under mochi. The room is elegant and the pacing unhurried, so clear your evening.
